Description
Panada is a half-moon-shaped pastry similar to an empanada, but with a distinctly Manadonese twist. Instead of the usual fillings, it’s stuffed with seasoned cakalang (skipjack tuna) sautéed with basil leaves, shallots, kaffir lime leaves, scallions, and chili, creating a savory and aromatic flavor.
The soft, fluffy dough pairs perfectly with the rich, spicy fish filling, making Panada an ideal snack for any time of day — especially in the afternoon with tea or coffee.
Believed to be inspired by the Spanish empanada, Panada has been adapted to suit local tastes and remains one of Manado’s most beloved traditional snacks.
